Art Institute: Week 1 Day 3
Wednesday July 14, 2010!!
Day 3 was Fun!!! I had 10 hours of sleep the day before so I didn't fall asleep during lectures :) Chef. Rudy Kloeble ( Image above) was our professor for 1105 culinary concepts. The class started at 9am and ended at 12pm It was a review from what we did in 1108 class with Chef Joe Cochran. I am not sure if this will be an advantage or disadvantage.. On Monday and Tuesday, we execute the product ( which was stock for this week) and Wednesday, we learn the concept. We got our syllabus, handouts for 1108 class. Basically, 1108 and 1105 goes hand in hand. which makes it easier in our part as a student :) Today, I learned about different types of stocks such as white stock,brown stock, white chicken stock, fish stock, and vegetable stock. I also learned about the elements of stock;Nourishing, Aromatics, Liquids, and Seasonings. The difference between stock versus broth. Stock included in food while broth is included in soup. The last thing that we went over was the heat patterns during conduction, convection and radiation.
For Intro to Success I had Mr. Shawn Entrikin. The class started about 1:15 but it was just for this week. When the clock strikes 1:00 the class will immediately start. Being ON TIME is a big deal for ALL of the classes. In this case, if you come in at 1:01, you are still 15 min late. ( policy of the school not the teacher) Same rules apply to every single class at AI. We initially introduced ourselves; our name, where we are from, why we chose AI, and what does it take to be successful at AI. We had 45 students in the class so we at least spent 20 min. going over this. At 3:00 we had a 15 min break. We then went over ecompanion, presentations, and scavenger hunt. So we spent the last 2 hours doing the scavenger hunt which was due by 5pm ( when the class ended) my group mates and I spent 1 hour and a half finishing the scavenger hunt and we used 30 min spare time to equally divide the presentation ( Group 4 which will present week 4) will present note taking, test taking and mnemonics. Since we finished before 5, I went to the secret computer lab and looked around the outbox where I found pictures from different chefs. ( Documentation of their experience at AI or as being a chef) It's like learning from the 150 years worth of experience of chefs AWESOME!!! Tonight at 10:00 I turned in my homework! 1 down more to go! :)
I don't have school on Thursday and Friday! So I'll be just working on my assignments. New post on Saturday for my computer application class :) Enjoy the rest of the week Take care :)
